Weekend Recipe

K and I decided that Mondays would be the perfect day to share something from our weekends. Just as a warning expect a lot of food related posts from me.

This weekend the hubs and I did our big monthly shopping, which we supplement with weekly trips to nearby farmer’s markets. I found myself with a fridge of amazing produce, two beauties which stood out; tiny cherry tomatoes that remind me of being a kid and picking them from our garden, and nectarines, which are the best I can ever remember having.

I feel like I am getting on this band wagon really late, but peaches (I just prefer nectarines because of the lack of fuzz) and tomatoes just don’t seem like a friendly combination. However, I vaguely remembered, Mark Bittman’s 101 salads which brought these two together with a group of other unlikely suspects. A quick search turned up what is more ingredient list than recipe: peaches, tomatoes, chili flakes, cilantro, red onion, which I left out because I didn’t have any, and a simple dressing of olive oil and lemon.

For the dressing I juiced half a lemon with a glug of olive oil, a handful of freshly chopped cilantro, and salt and chili flakes to taste, you can always add more. I halved the cherry tomatoes and wedged the nectarine, a quick toss, with the dressing and it’s ready. This salad gets at the essence of what I love about food, simple fresh ingredients, combined in an unexpected way. Salty and spicy, with a sweet, and pleasant richness.

I can say I never would have thought to put these seemingly unrelated ingredients together, and I am so incredibly happy that I did. Oh and I added mixed baby greens, baby arugula is also wonderful.
